1. Ingredients:

  • For the Tapa:
  • 1 lb. sirloin, thinly sliced into bite-size strips
  • 6 garlic cloves, chopped
  • ⅓ cup light brown sugar
  • ¼ cup low-sodium soy sauce
  • 1 Tbsp. distilled white vinegar
  • 1 Tbsp. cornstarch
  • ½ tsp. crushed red pepper flakes
  • ½ tsp. freshly ground black pepper
  • ¼ tsp. kosher salt
  • ¼ cup vegetable oil
  • For Assembly:
  • 4 cups chilled cooked jasmine rice
  • 1 tsp. Diamond Crystal salt or ½ tsp. Morton kosher salt
  • ¼ cup vegetable oil (or more)
  • 12 garlic cloves, finely chopped
  • 4 large eggs

2. Preparation:

  • Marinate the beef by combining it with the tapa marinade ingredients in a bowl. Mix well, cover, and refrigerate overnight.
  • Make the garlic fried rice by heating cooking oil in a pan, adding crushed garlic, and cooking until light brown. Stir in leftover rice and cook for 3 minutes. Season with salt and continue to cook for 3 to 5 minutes. Set aside.
  • Cook the marinated beef by heating a pan, pouring the beef and marinade into it, and adding water. Boil, cover, and simmer until the liquid reduces by half. Add more oil and cook until the liquid evaporates. Fry the beef until medium brown and set aside.
  • Fry the eggs by adding oil to a pan, cracking an egg, sprinkling salt on top, and cooking for 30 seconds. Pour water on the side, cover, and steam until the yolks are fully cooked.
  • Arrange the beef tapa, garlic fried rice, and fried egg on a plate to assemble Tapsilog. Serve with vinegar as a dipping sauce for the tapa.
